Bibimbap

This is another great recipe from my current box of Simply Cook meals. We are 'travelling' to Korea this time!

 In The Box

  • Gochujang Paste
  • Soy And Red Miso Sauce
  • Miso Paste

 

  • Shopping List

  • 200gm minced beef
  • 250gm Spinach
  • 1 Carrot peeled and julienned
  • 2 eggs
  • 150gm Rice
  • 1 tablespoon Sesame Seeds

 

  • Store Cupboard

  • 1 Tablespoon Sesame Oil
  • 1 tablespoon sugar
  • 1 Tablespoon Vinegar
  • 1 tablespoon Olive Oil
  • Optional

  • 4 Mushrooms and a handful of beansprouts

METHOD

Preheat the oven to the Heat Plate Option. Place two large bowls and two large serving bowls to keep warm in the oven.

First of all, the bibimbap sauce was made. I mixed together the Gochujang Paste with the sesame oil, sesame seeds, sugar, vinegar PLUS 1 tablespoon WATER and set aside.

Mince and rice cooking

After boiling 300ml water in a saucepan, I stirred the Miso Paste in and added the rice. After bringing to the boil, the rice was left to simmer for 15 minutes.

In a large frying pan, the olive oil was heated and the mince stir fried for 3 - 5 minutes* in the Soy and Red miso Sauce until it was cooked.

The mixture was placed in one of the peheated bowls and placed into the oven to keep warm.

Then the carrots were stir fried, followed by the spinach. (Cook each vegetable separately). If you use mushrooms and beansprouts, stir fry these too. Place vegetables in another pre heated bowl and place into the oven to keep warm.

Then in the same pan, the eggs were fried.

I placed the rice into 2 large bowls and added all the other cooked ingredients. After pouring over the bibimbap sauce, we enjoyed this meal with a chilled glass of Sauvignon Blanc.

*I cooked the mince on a low heat with some beef stock for twenty minutes first and drained through a colonder before stir frying. This is purely my own choice as I am slightly wary of the short cooking time mentioned in the method above.

This dish was a revelation to us as I would never have thought of eating a fried egg with mince!! But the sauce on the rice was delicious and really complimented the whole meal.
