A great easy summer salad to brighten up your day.



One lettuce
One large onion
Three tomatoes
Half a cucumber
8 radishes
Half pint or 284mls malt vinegar
Sugar to taste


Cut up lettuce, onion, cucumber, tomatoes, radishes. Place in a mixing bowl. Put 2 tablespoonfuls of sugar in a measuring jug. Use sufficient hot water to dissolve the sugar. Add half a pint of vinegar. If too strong add cold water to the jug and taste.

Tip salad ingredients into a mixing bowl and stir the salad into the liquid. Leave to marinade over night.

Enjoy with cold meats or quiche. Perfect for a summer day!
