Today I am thrilled to be interviewing MasterChef Champion 2015, Simon Wood. A very worthy winner I am sure you will agree!

What is your earliest memory of a meal you cooked and enjoyed?

I remember making a simple Omelette and a salad with my dad when I was very young. It's still something I make as a quick go to now when I’m pushed for time!

You worked at McDonalds when you were younger, I read that burgers are a guilty pleasure of yours, how do you make your own burgers?

I like to use Brioche buns and minced turkey… With a few added extras!

Which cookery writers past or present inspire you?

Elizabeth David is definitely a huge inspiration, she revolutionised British cookery.

What is your favourite sandwich?

Smoked Mackerel and Horseradish (lots of it!)

I see that you enjoy Italian food, do you have a favourite dish that you cook yourself from a region in Italy?

My favourite has to be my Wild Mushroom Ravioli and Pangrattato.

Are you particular about which alcohol to drink with the various dishes that you cook?

I can be on special occasions! But I'm generally very happy with a nice Malbec or Merlot.

I see that you like to cook everything from scratch, do you think you would cope on a Desert Island?

Absolutely, ingredients wouldn’t get any fresher than that!

Do you have time to go out with your friends still and if so, are you a pie and a pint man when you go to the pub?

I do have time to go out with friends and family, I will always make time as I think its important. However I'm more of a wine and anti pasti & olives person, than pie and pint!

Your winning courses for the MasterChef final looked absolutely amazing, have you served those dishes to your friends or family before or since?

I’ve made the dessert since (I cooked a version on ITV1's This Morning) but they were very intricate dishes to make and I haven’t had time to do them all again yet.. although I’m certain they will make an appearance!

What are your plans for the rest of 2015?

At the moment I'm reflecting on what has happened and where I want my journey to take me next! This will be somewhere in food but I do need to sit and look at everything that is available and being offered to me - it's been, and still is, crazy!

Who Am I?

Hi, my name is Janice and I am the founder of stands for Optimistic and ProActive Seniors Chat. OAPSchat was born in April 2013 as a Facebook page. To date there are over 1460 FB likes. It was in November 2013 that I decided I had enough material and confidence to launch the website.

Since that day, I have been writing articles on all kinds of topics. ranging from hobbies, holidays, food and drink, memories, families, finance and much much more. I now have over one hundred and thirty seven wonderful contributors to date and articles on all different subjects are posted on a daily basis. Over 1400 articles can be read now! Members can comment via disqus, FB and Twitter.

Raffles are held monthly, sometimes more often. A newsletter goes out once a month with my plans for the coming weeks. I am an Independent Happy List Winner 2014 for founding the website.

Loneliness is a big scourge on our society worldwide and the website helps combat this awful isolation by coming together and sharing our thoughts and ideas. OAPSchat is well and truly born now and I hope it will continue to thrive. With your support, I'm confident it will!
