Chicken dish

This is a great and very tasty if you are busy. Easy to prepare and cooked in about an hour. Do try it!

Ingredients for serving 4 people

4 Chicken Breasts
Jar of roast sweet peppers
Jar of Red Pesto
4 small dried chillies

4 potatoes quartered
2 onions quartered
8 small chorizo sausages
garlic (leave the skins on)

Pre-heat Oven to 170 Celsius or 340 Fahrenheit or Gas Mark 3

Whizz the sweet peppers, chillies and the pesto together and add a small amount of the pepper liquid. Don't make it too runny as it will become more liquid as it cooks.

Brown off the chicken portions and put in casserole dish. Pour the sauce over. Cover and place in pre-heated oven.

Place the potatoes in a roasting tin and put in oven at the same time as chicken. After half an hour add the onions, garlic and chorizo sausages to the potatoes.

Stir the sauce and baste the chicken.

Cook for another 15/20 minutes then check that potatoes etc are cooked and browned. Take off the casserole lid to let the exposed chicken dry slightly for a couple of minutes.

To serve: Garnish with parsley. (The garlic should be soft inside and easy to squeeze over.)
