Curry Simply Cook

I have to admit that I do tend to cheat with curries and use a well known jar of curry sauce, so this was going to be an interesting and hopefully, an enjoyable experience eating this type of curry.

Nyonya Curry is the second dish I made using my box of ingredients and recipe cards sent to me from Simply Cook. I hope you will want to try this and enjoy eating it as much as I did.

In the box

  • Nyonya Paste
  • Garlic Coconut Paste
  • Nyonya Garnish

Shopping List

  • 250gms chicken thighs,(off the bone),chicken breasts cut into bite size pieces
  • 2 large potatoes, peeled and diced into 2cm cubes
  • 400mls coconut milk
  • 100gm green beans
  • From the store cupboard
  • 1 tablespoon olive oil
  • Optional
  • Lime wedges to garnish (optional)

The prepared potatoes were par boiled for 5 minutes.

The olive oil was poured into a large frying pan and I fried the chicken for 2 minutes, stirred through the Garlic Coconut Paste and fried for a further 2 minutes. The Nyonya Paste was then added and stir fried for another 2 minutes.

After draining the par boiled potatoes, I added them to the frying pan along with the coconut milk and simmered for 8-10 minutes.

All the ingredients simmering away, the aromas are wonderful!

Finally, the green beans and the Nyonya Garnish were added to the frying pan, stirred and simmered for around 4 minutes.

To Serve

The mixture was served in heated bowls. I did not have any lime wedges, but I am sure they would have enhanced the curry flavours.

Nyonya curry ready to be enjoyed

This dish was thoroughly enjoyed. I wish all curries tasted as delicious as this one did. I will definitely cook it again!
