The winning entry for The Forum Recipe Competition "Share a Recipe, Win a Prize!" has been won by Adrienne Laverick. I spent an afternoon making the delicious soup myself. It is a great value for money lunchtime or light evening meal.
500 grams halved tomatoes.
2 x cloves chopped garlic.
1 tablespoon olive oil.
1 tablespoon vegetable oil.
1 x onion.
500 mls vegetable or chicken stock.
500-600 grams grated beetroot.
Put tomatoes on baking tray and sprinkle with garlic and olive oil. Roast at 190 deg for 25-30 mins...
Push through sieve to remove skins and seeds...
Roughly dice beetroot and onion. Heat vegetable oil in pan, add onion and sauté until soft and transparent.
Add stock, grated beetroot and tomato pulp and bring gently to the boil. Simmer for 10-15 mins until beetroot is tender.
Cool a little, then liquidize...
Serve with a dollop of creme fraiche, or crumble over some feta cheese and serve with hot crusty bread.
I hope you will try this recipe. I crumbled feta cheese into my soup and ate hot crusty bread to accompany this filling lunchtime meal.
