The High Street florists are either privately owned ,or part of a chain. You have the freedom of choice to see your flowers before they are delivered and choose an individual bouquet of your choice. Some florists may use Interflora as their agent to deliver or many have their own drivers and are from the locality. I have often found that if you use a local florist, then opt for the ones who make up the flowers and deliver the orders themselves. This is usually more cost effective.
